my school gives us the option to take biochem with or without lab. Do you guys think the lab version is viewed as "better" by adcoms?

I am not sure how adcoms would see it but I don't think it would impact your ability to get an interview. My university actually splits biochem into a lecture portion for 3 credit hours and a separate experimental biochem course for 3 credit hours. If my minor wasn't biochem I could easily take the lecture portion as a free elective and forgo the lab portion. I do think that labs are incredibly important though as it allows you to take what you learned from lecture and apply it to the real world.

The course with lab may help you meet lab hour requirements. Other than that I don’t think an adcom member would really notice.
