Let's say there are 3 sequences for a biology course. Can I take the first sequence in one university, and then the remaining two in a different university? i.e. take Bio I in university A, and then take Bio II and III in university B.

Shouldn't matter in my opinion.

As far as your application is concerned, it shouldn't matter. However, University B might not accept Bio I from University A. Check with your school(s).
