should we do this for our own good or do some interviewers ask to see a copy of something we may have submitted? i'm asking because i didn't really make copies of everything i sent out to all my schools and i don't want them to think i'm disorganized or whatever because i don't have a copy on me...
 
In general I think it is a good idea to keep a copy of everything you turned in to that school for the interview. For your own reference but also because they might ask for it at the interview.

You should probably keep copies of your application materials just in case the school loses something, and you can re-submit something if you have to (or prove that you submitted it in the first place). I don't think that you'll actually need to submit anything in the interview - the admissions office should have provided your interviewer with your complete file, if it's an open-folder interview. I can't imagine an interviewer or a school expecting you to bring a copy of your application with you.
 
if you can fit a copy of your amcas in your folio or binder or whatever, it can't hurt. i'd suggest that you bring a couple of copies of your personal statement though. if you have research or whatever, you might want to bring something that could help you to explain your project to the interviewer in case you are asked about it as well - a small diagram with a few bullets, perhaps. good luck guys.
 
Yes!!! MAKE COPIES OF EVERYTHING!!!

I lost count the number of times my interviewer(s) were not prepared, and needed an extra copy of my AMCAS App and/or Essays.

It only shows that you are prepared. Also, if you have publications or presentations, make sure to bring copies or abstracts. It gives them tangible proof of your credibility.
