One of the doctors I work with has suggested calling the school I’ve been waitlisted at, because it will show how badly I want to attend. Do schools actually view it this way, or do they not like to be bothered? Would a week out from the waitlist email be too soon to start calling if yes?

Don't call. They assume you're interested by merit of you not rescinding your wait list position. Calling won't help or hurt you. You'll just get a canned response about how the wait list works. You'll just waste your time and their time.
