Will I be able to update my ERAS before they get officially released on October 1st if I get my score between those dates or will I have to notify each school about an update?

Your application gets sent out as soon as your submit it.

Once you submit it, basically the only changes you can make are demographical--email address, phone number, etc.

Not exactly. Your CAF is locked down at the time of submission, so new publications will need to be communicated directly to programs (keep in mind that nobody but you will really care at that point). But everything else can be changed.

USMLE scores can be updated anytime and will be sent out to every school the second you hit the button.
