So here's where I'm at:

I started university as a biomed major, did really well and had a great GPA.

Then I started to really dislike school, drink, party, and so on - and wrecked my GPA. I didn't study at all for Orgo or physics, and so I brought my GPA down to 3.0

Cut to now, I'm entering Junior year, totally clean from all the partying and so on - and sure that I want to be a doctor. I'm retaking Orgo and Physics, and my GPA should be a 3.15 at least by the time I retake them.

So once I graduate, here's what it should look like:
I took my MCATs already - 29
GPA - 3.33
LoR - some solid ones from doctors I've shadowed and teachers from UB
Service - Over a thousand hours of community service with families and children ( I took a semester off to do service full time)
Volunteering/Shadowing - I should have a hundred or so hours of volunteering and a hundred or so hours of shadowing experience with multiple doctors

I'm cool with doing DO, but would like to do MD. Either way, I'd like to know what my chances are, and which schools if possible would be good choices. Thanks guys

If you want to do MD, you'll have to do SMP or retake the MCAT and destroy it. Otherwise you should be good for most DO.

MD is unlikely with that GPA and a below avg MCAT, but you're fine for any DO program, including mine.
