Does anyone know if we need to have this equation memorized or if it is even something that the MCAT will cover? I looked through the AAMC's outline and didn't see it, but I wanted to make sure. Thanks!

I doubt it. That's usually covered in thermodynamics classes and not so much in gen chem. The MCAT also de-emphasizes memorizing equations and instead focuses on how variables are related to each other so memorizing equations isn't going to help you much overall.
 
You definitely don't need to memorize it! Complex equations like this may come up if they're given (and explained) in a passage, but questions will be based more on reasoning, units, etc. than anything specific you could study. It's definitely good to understand vapor pressure in general though.
