My school attaches letters of recommendations from my letter writers to the committee letter, so do I need to find additional letter writers for the optomCAS portion, or will schools accept the committee letter and the attached LORs to meet all requirements?

It depends who has written your letters. Each school has different requirements, so if your committee letter meets the requirements, then you do not need to find additional letters (other than the optometrist one). You can have additional letters if you so choose- OptomCAS allows for up to 4 and the committee letter only counts as 1.

So the letters of recommendations that I have requested (from 2 science professors and 1 optometrist), will not count towards the requirements because they are attached to the committee letter?

Sounds like you need to contact each school and let them know what's going on, or have your school detach the letters (ask nicely, I'm sure it can be done). As far as I've heard, Optomcas WILL allow you to submit with only one letter.
