If someone got arrested when they were younger for shoplifting and then the police came and their parents came..but the store didn't press charges..and they never had to go to court, no one ever called after that, and nothing ever happened to them. Is it still on their record and if so, are they considered "convicted?" of a crime/misdemnor whatever?

How could you be convicted of something that never went to court? We do live in a land of courts, if you recall. You'll be just fine. It's nowhere on your record. What'd you still? A t-shirt from Abercrombie or something?
