How many courses allowed to be in progress while you are submitting your application?
Say, if you still have one full-year of organic chemistry left to be completed when you
submit your application in August. Will it be okay?
 
I don't think I would do it unless you had a REALLY good gpa and MCAT score already. Organic chemistry is kinda the make-or-break-ya class for med school, and there probably aren't many schools that would want to spend time or resources on someone who has yet to prove they can pass at least one semesters worth of orgo.

If, on the other hand, you already have proven your worth by getting excellent scores on all your other pre-reqs and the MCAT, then they might be more willing to take a chance with you since you've already demonstrated your intelligence.

The long and short of it, it's definitely possible, but make sure you have given them something that allows them to feel confident in your academic abilities so that the risk, in their eyes, is somewhat diminished.
