Should we just be objective (what we did) or write "I did this because.." "From this I gained..."

And can we introduce some style or should it be cut and dry?

be clear and objective, dont write a story to every activity and do not waste your time trying to make it stylish.
 
I think both of those are valid ways to start. You can add some style, but keep it easy to read. Remember that the people that have to read your activities might be reading through hundreds that day, and if they have to sift through long winded, redundant, or confusing prose; they're not gonna be too happy.

However, I'm sure that a bit of style would be welcome as long as you stay concise.
 
One could use the same argument, that screeners read hundreds of descriptions, to mean that one should write their own such that it stands out a bit. Not by being flamboyant, of course, but perhaps by including a bit of humor or by touching on how the activity affected you or something interesting you saw or learned. My eyes would glaze right over "Shadowed Dr. Smith in his clinic for 50 hours as he saw patients," but might be interested in "Shadowed Dr. Smith for 50 hours as he saw patients, including seeing cases of childhood diseases I had thought were essentially wiped out such as scarlet fever," etc. You want to be unique, not simply cover all your check-boxes.

Yeah, I agree with this. I would make it objective.
