For CV purposes would you recommend putting all programs that your were involved with as an undergrad? Also what about activities such as running a marathon/intramural sports? Is this too much, or is the more on the paper the better? I have been advised in the past that you never know what you have that might strike a cord with someone.

CV's should include everything. Not to be confused with resumes...which you develop from your CV to include activities, experiences, skills, education, etc. specific for a particular job

Check out a previous thread about CV's...there are some impressive examples.
