Is it customary to include DAT scores on a resume before submitting it to the dental schools? I know it is common to include one's cGPA/sGPA, but I'm not certain whether or not it'd be pointless to include the DAT scores because the school will already have those. Any feedback would be helpful.

What's this resume all about?

I am under the impression that a resume should be presented during the interview process

Yes, let's give adcoms more papers to look at during interviews. It's not redundant at all. 🙄

and let the papers say exactly what is on the papers in front of them, just in case they forgot

It's not customary to present a resume during your admissions interview. They have your application (or maybe not if it's a closed interview). It's up to you by way of how you answer the questions to fill in any blanks.
