Do you have to notify the schools that you are not planning on attending, or do you just simply not pay the deposit? Thanks.

you're not required to notify a school if you're not accepting their offer. If you have an interview coming up, it might be good to say that you're done interviewing, because you've already accepted somewhere else. Nothing really too formal, just drop them an email or call the office.
