So I've been granted a deferment but I am also on several wait list. If I accept the deferral, can I still accept the wait listed school, if they accept me.

We won't know that you deferred, only that you are accepted.

Yes, although you can still decline if accepted off a waitlist.

They may presume that this means you are ready to start immediately...
If they know that you deferred at another school, they may feel "gamed."

But how would they know that I applied for deferment at the other school. They will only know my acceptance and not where I deferred.

I will not be able to start immediately, since I was awarded a prestigious fellowship.

I already sent an update on this fellowship, so now it is the waiting game. I was going to send a letter of intent tomorrow or by Thursday.

I think very few schools allow you to defer if they take you off of the waitlist, because at that point, they're trying to fill the class.

if you get off a wait list at most school, you cannot defer there for any reason. You'd have to pick between matriculation there or declining the offer.
