Is there any trick to quickly figure out the number of chiral carbons in a large compound?
 
well i usually remove all carbons that are double bonded, then ones in middle of straight chains that can have 2 Hs i see right away. I then look for the areas where there could be 3 bonds, connections between two rings etc. Practice, it becomes really easy and fast, you realize where to look.
