I passed, but it was only a 192 (78).

I got a 225 on my Step I.

I'm applying in a non-competitive specialty to middle of the road or low ranked programs.

My score report has NOT been released to any programs (I did not check the box on the application about releasing the report to everybody)

None of the program websites said anything about requiring Step 2 CK to be on their rank list.

Can I just leave things as they are, and then release the score to programs AFTER the match?

Should I email the program directors and specifically ask them? I'd rather not do this if I can leave it "out of sight, out of mind"

I would not "stir" things up. If they want to know your score they will ask you. I am not sure if programs constantly check or download info from ERAS to see which applicants have or not taken step 2....

I think that you should be more concerned about the cause of your poor performance in Step 2, and try to work on increasing your clinical knowledge before you start internship year. Your step 1 score is good (above average), so you shouldn't have any problems with matching, but if you got such a low Step 2 despite having prepared well for the test, then you might face some difficulties/limitations during the hectic internship year.

Note: if you totally blew off the exam and didn't prepare for it, then we would be having a totally different conversation.
