DIY postbac with just prereqs?

I am finishing up my DIY postbac with just the prereqs for most med schools
Bio 1
Bio 2
Chem 1
Chem 2
Orgo 1
Orgo 2
Biochem
Sociology
Psychology

I have a 3.91gpa for these courses but I see most people throw in some upper level coursesin their DIY postbac. Do med schools want more than just the minimum?

Background:
Graduated with a mechanical engineering degree while working full time through school. First three years sucked 2.44gpa but last three were great 3.51gpa. As of now my cGPA=3.14 sGPA=3.35.

My issue with upper level bio courses is they are only offered at my old uni which is an hour and a half drive (I'm taking the prereqs at a local state college). How much will it hurt me not to have a semester or two upper level bio classes?

How heavily are those classes weighed? I had a ton of upper level science classes for engineering but none of them were biology related. I took a TPR diagnostic test and got a 495. I've got 4 more months of studying before I take the test (300 more study hours) so I am assuming something around a 505.

I am weak on clinical volunteer hours (150 by app time) so I was planning on really working on non-clinical volunteer hours over the next year if I need to reapply. Would it be better to focus more on taking upper level bio classes if I need reapply next cycle for 2019? With work, I could either do 6 upper level courses over the next year or I could add 300 non clinical volunteer hours, assuming I would need to reapply for the 2019 cycle. Which would be more important for a reapply?

I got in w the bare minimum prereq postbacc (without biochem too but i did have both orgos) so anything is possible as long as you can do decently on the mcat.
