A little bit of background:

During my Junior and Senior year of high school, I went to community college full time. My initial career path was to transfer to a four-year university once I graduated from high school to get my degree in Computer Science. As pre-requisites for my transfer degree at the community college, I ended up taking a handful of pre-med classes.

My home life has never really been great, and it got significantly worse during that period of time. I also realized that I didn't have a passion for computer science I thought I did. To put it simply; I was pursuing that career path because other people told me to, not because I actually wanted to. For context, I've always wanted to go into medicine (specifically Psychiatry), but family members discouraged me for bogus reasons that I believed at the time, pushing me towards computer science instead. Because of these two major factors, my mental health went into a bit of a tailspin and that reflected in my grades for those classes. The classes are listed below:

General Chemistry I - C+

Calculus 1 - C
Calculus 2 - D+, retook once and ended up withdrawing, retook a second time for a C

Engineering (Calculus-Based) Physics I - D, retook once for a C
Engineering (Calculus-Based) Physics II - B-
Engineering (Calculus-Based) Physics III - C+

My cumulative GPA during this time period was a 3.01

Once I graduated, I took a gap half-year to figure out how to get out of that situation safely. I ended up getting a full-time job at my local hospital and moved in with my very supportive significant other. Things are great now, and my mental state is better than it has ever been in my life. I finished taking the pre-requisites for my new major (Bachelors in Psychology) this last quarter. So far, in the classes that I have taken at this university (University of Washington - Tacoma), I have a cumulative GPA of 3.95. I am aware that I still have a lot of GPA repair to do, but I think it is do-able. I hoping to maintain a 3.9x GPA at my University, indicating a strong upward trend in a school that is known to be much harder than a community college.

Anyhow my question: Should I retake the courses mentioned above?
I was thinking about retaking General Chemistry I for the sake of relearning the content because I took that class so long ago (Fall of 2018). I remember next to nothing about that class now and I wouldn't be taking the rest of the series for another two years, so I think it would be a good idea to retake it for that reason. As for Physics and Calculus, I don't think I need to retake those. I'm hoping that with good ECs, a strong MCAT score, and a strong upward trend in cGPA and sGPA, I should be able to get in somewhere. Please let me know your thoughts on if my plan is a good one or not.

Thanks for taking the time to read and respond!
I agree with you. Taking general may be good for your MCAT and for the next in the series. How many more courses/units are you planning on taking?

I agree, I would probably retake gen chem. I would not retake calculus, and I lean against re-taking any of the physics since the last grade you got was a B- which to me indicates that you probably have enough of a handle of the material to just study it for the MCAT. You have plenty of other "hard science" classes coming up that, provided that you do well, would show that you have redeemed yourself.
