One of my summer jobs during undergrad was at a Thai restaurant as a dish-washer. Do I even put this in my app? lol

You definitely should! It's more unique than entry-level clinical jobs, and could provide a lot of useful insight for your application. Don't embellish it like you were saving the world, but be honest about how working at the bottom helped you see the world in a new way.
