So I was wondering, if I took a PSEO (college and high school dual credit) microbiology lab, would that count as working in a lab/research?
 
No. When people say research they mean original research. Labs are repeats of well tried experiments done for the purpose of gaining a baseline familiarity with lab techniques.
 
Fraid not. If you worked at a teaching lab like that it would be work/volunteer experience, but as was mentioned it wouldn't be research in itself.
