Do med schools know how many we apply to?

I remember reading something about, they know after a specific date. Do they know after they give acceptances, before? Does it look bad if you apply to 35 schools? thanks in advance.

No, they don't know how many you apply to, unless you tell them.

After a certain date, they know if you hold acceptances, and may even know where those acceptances are, but that should be a lesser concern to you.

think about this for a second. you are not the only one applying, being reviewed, being interviewed, or being accepted. time will restrict how scrupulous you and an adcom can be. relax.
