Hi! Does anyone have new statistics (2019) regarding the averages for the science gpa and MCAT scores? I am beginning to draft a list of what schools I could apply to and was wondering if anyone has any advice!

Sorry, I don't have much info on DO applications/programs beyond the dataset I compiled/mined there. I didn't personally apply DO, so I have a limited understanding of the process.
Any state run DO schools (TCOM, MSUCOM, OUHCOM, OSUCOM, Rowan, WVSOM...) will always have better resources, but they also accept more that 2/3 of their classes from instate, so if you're not from one of those states you're pretty much stuck with other DO schools (unless you have stats higher than their averages meaning 3.6+ GPA and 505+ MCAT). Other than that I'd say PCOM-PA, DMUCOM, KCUCOM, CCOM, VCOM-VA, CUSOM will come close (if not better) on resources as well.
3.6+GPA and 501+ MCAT. Everyone across the board has said 505+ for DO, but I had a 502 and had absolutely not trouble getting accepted to multiple schools, including KCU which has a 506-507avg.

The average also means some people will score higher and some will score lower. It's called standard deviation. I don't think anyone is saying you can get in with a 502. I think they probably meant get a 505+, then you will get a shot at better DO schools like PCOM or state DO schools.
