Does it matter how many schools I apply to? Do admission committees really care? I mean if I apply to a few and don't get in then I'll have to do the whole process all over again and pay the same or even more the second time around.... and let's say if I did apply to more then 15 schools then will the committees think that I didn't research my options and just applied to all the schools I could name? Any ideas?

Adcom's can't see the other schools that you applied to. You can apply to all of them, or just one and they wouldn't be the wiser. The goal is to do research and only apply to schools at which you have a realistic shot. This isn't intended to impress adcom's, but to save yourself a bunch of money.
 
the schools cannot see the other programs you have applied to until may (if you are holding multiple seats by placing placing multiple deposits). Some may ask at interviews which other programs you have applied to, but 12-15 is not uncommon by any means
