Doing PAT in certain order?

Ehh not really! On the exam, you get the review button after you are done with the questions. You don't want to sit there and press the skip button until you get to hole punching section. That's just wasting time.

You should definitely start with the areas you're most comfortable, allowing yourself more time for the difficult questions.
You don't have to hit the "skip" button to advance to further questions. You can hit the review button and jump to any numbered question.
I suggest picking your desired order, then start practicing just PAT in that order. Be sure to get comfortable with the buttons!
I personally jumped straight to angles (question #31) and finished out all the remaining sections, so hole punching, cube counting, and pattern folding. This left me with key holes and TFE for last and I usually had about 30 min to perform these two sections and review any marked answers!

I took it in April, so it's been just over a month.
I skipped key holes, did angles first and continued in sequence...and in the end did keyholes.
