I've written an essay for a scholarship. If it's single-spaced, it fits nicely in the allotted space in the application, but if double-spaced, it exceeds the space limit. Nowhere on the scholarship requirement says that the essay should be double-spaced, or it should have certain fonts, and so on. Still, should I double-space it?

No need. Double space is preferred in academic course work so your professors can remark on your excellent writing in those spaces between the lines. For a scholarship single space is fine and I would think preferred.

It depends upon the standard in the specific field as well as your own preferences. I would agree with Neuro that it is probably unnecessary, although I would probably go with 1 1/2 spacing simply because it tends to look nicer for most fonts....
