I have a lot of unpublished research and research pending publication. Is it possible to put that into ERAS? Would that be under Experiences or Publications?

Unpublished research should go under "Experience," with posters and/or oral presentations under "Publications" if they were presented. If a manuscript has been submitted, you can select "peer reviewed journal articles/abstracts (other than published)" and denote "submitted."
