Almost anything you want. My opinion on Extracurriculars is that they're things you do in college regardless of whether or not you're applying to professional school. Tutoring, coaching, IM or NCAA sports, volunteering (doesn't necessarily have to be clinical, do something you enjoy), clubs, and even hobbies if they're organized/you've produced something impressive count.
