i guess it depends on if the interviews noticed it... if i were an interviewer and noticed an applicant chewing gum i would see it as unprofessional

Pretty unprofessional but very subjective on how it'll be received.
 
We don't run MMI's at my school, but I concur with this and to OP, just treat it is a learning moment.

No idea whether that's a severe offense as written, but you'd definitely catch crap for it from your standardized patients.
I have seen one school posted a sample MMI video and the interviewee was chewing gum!!!!
 
Take a breathe and relax. Not end of world. My phone accident went off (vibration mode thought) 5-6 times during the meeting with the dean at DMU. Not sure if the dean noticed (I was in 2nd row so probably did) but I'm positive everyone near me heard it. Ended up with an acceptance nonetheless. Mistakes happen. Just learn from them and don't stress over what is done.
