Fellowships - plese recommend

I'd like to complete a fellowship in Hand Surgery or facial reconstructive surgery (Max/Fax) somewhere in Canada after completing plastics training in Australia. I'd like it to be away from home (Australia) in Canada because i heard their Fellowship programs are especially rigorous and have a worldwide reputation.

Can anybody give me some big names of universities/hospitals to complete a fellowship with?
