Can you go into an AACOMAS account and fill out the courses taken section to see what your non-science and science GPAs are according to them a year before you actually apply? I'm trying to figure out if I should be boosting my science GPA with an additional 2-3 courses or not.

Not without submitting to at least 1 school. Don’t do this because then you will technically be a reapplicant for next year. Search the forums because people have created gpa calculators equivalent to the ones they use.
