As many as you want. Do the ones with the highest grades. I did that. You can see how this selection is reflected in your application by generating the PDF in "check status" (all the way at the bottom). See what it looks like and decide from there.
How important pre-req matching is?, idk, you have to ask someone like @Goro or @Faha for that. Personally, I feel like it is a tool for students.

I know that this is an anxiety provoking process, but if a school says that they require "1 year biology with labs" what is so hard to understand about that?

B/c it lets you add as many courses as you want. I can see why students have this issue, as everyone wants their application to look perfect. Some schools have an additional item in the drop down for ‘upper level biology’ or something to that end, but most do not.
Look in the generated PDF on AACOMAS and you will see how the selections reflect. Judge from there.
I only added classes that had biology in the name, ie bio1,2, molecular and cell bio, microbio...
