I'm kind of curious if any of you guys have had a non-faculty member provide an academic LOR. Someone like a grad student who is teaching the course for the faculty. Do they accept a LOR from someone who is currently working on their PhD?

Are you talking about a TA? In that case, most schools (at least those that use PTCAS) specify if they accept these letters as academic or not. If you can't find a clear answer though, your best bet is probably to contact the school and ask.
