If I have the choice to choose between a Professor on the premed committee at my school or a Professor where I might understand the material better, what should I choose or does anyone have any insight?
If you don't anticipate understanding the material as well as possible, what benefit do you expect to derive from having the professor be on the premed committee? I think you need to make class selection decisions without trying to game out future interactions with a committee. JMHO.

Yes, of course, but you can get that from any professor, and don't need the professor to be on the committee. Not doing so well in the class, will hurt you more than help, even more so if the professor is on the committee.
