Only need 1 of the following:
1. Intro bio instructor
100-level course/about 200+ students. Wasn't considering him as I never went to office hours, and had pretty minimal contact with him. However, recently have ran into him several times, and he has surprisingly remembered my name (took course ~3 years back), has engaged me in very friendly/interested conversations, and appears to somehow know about or followed parts of my academic "career" (not sure if he's talked to another prof of mine, or what). Makes me think he would write a positive letter. Mostly, he's in the running due to extreme niceness and showing an interest, which are both pretty refreshing.
2. Genetics instructor
Upper-division genetics course, smaller than #1 (~80 people). Again, never went to office hours, but had some contact through after-class questions, a couple emails, etc. He seemed to like me well enough during class and, like #1, I have run into him since, and he has been complimentary and knows about a couple of small things I will not put on AMCAS (but would be nice to have on letter, though no guarantee he would).

3. Calc professor
Small class, so had plenty of 1-on-1, asked questions, only went to office hours a couple of times, and had conversations with him many times after class. Did well in class, and was one of a couple students he invited to join a more advanced section. Worried that some schools will not accept this for science, though.
Did very well in all 3 classes. If it makes any difference, #1 was online problem sets + multiple choice exams, #2 was extensive written problem-sets + essay/problem solving exams, #3 was....math.
