What is the proper way to handle two interviews scheduled on the same day? I haven't committed to either one yet... Is it professional to ask for an alternate interview day?
Absolutely; this happens regularly. Let them know that you have a scheduling conflict, but are very excited for the opportunity and would liek to make another day work to explore the opportunity.
Ask for an alternate day, but if none are available, do the interview at whichever site you've ranked higher and ask to do a Skype interviewer with the other.

Exactly. I had lots of interview offers last year (>9) so there was lots of overlap in dates, but I had to phone interviews for 2 programs and a Skype interview for another, because none of them could accommodate different interview dates. One program actually me an individual interview date, where I was the only applicant there and talking to many faculty and students by myself, but that was pretty unique.
Something to keep in mind when choosing which sites to ask for alternate dates or Skype/phone interviews, I didn't get any offers from these other sites where I didn't interview in person. I received multiple admission offers, but all were from places I interviewed in-person. So, prioritize your interviews wisely.
