How do adcoms look at how we categorize our extracurricular activities?

This refers to the amcas application categorizations for ECs:
I have plenty of activities that can fit in one, two, or even three categories. For example, there's community service endeavors I've done, but they're also leadership because I led these groups. If I list them as leadership will adcoms recognize that they are community service endeavors as well or will they just count it as leadership?
Do adcoms recognize that each activity fit multiple categories and count it that way or just the one we designate it as?

I really don't want to be rejected because of a lack of community service, when my activities do show community service, but I chose to designate some of them as leadership. Will this be an issue? I also did the same for a community education course I taught. It'd be community service, teaching, and leadership.
 
For the leadership category it says, "Not listed elsewhere". I assume that means that you would only select that category if the activity doesn't fall under a different category such as community service, athletics etc. I'm not using the leadership category for any activity because they all fall under some other category. I used the description section to show the leadership aspect of the activity. Also for overlapping categories such as posters and presentations I just used 1 entry under research and mentioned the posters/presentations in the description of the research I did.
