How do med schools view the GPA of someone in all science/math

If you're asking for CA schools....good luck (I'm not being sarcastic). If you're talking about other MD schools with a solid MCAT - then you should be able to garner an acceptance (barring no major red flags)..
 
With the exception of 4 GE's and a semester of english, the other 19 classes (from freshman to junior year) I had to take for my major were BCPM classes.

If I end up getting a good MCAT (which I haven't taken yet), will top schools consider my course schedule as a factor when they see a 3.6? My BCPM is a 3.73.

I know a 3.6 isn't terrible but it's below average; and I'm looking at top 30 schools.

Any advice?
Is 3.6 your cGPA or your AO GPA?
 
I suggest you avoid applying to top schools that have a bottom 10th%tile above (maybe even near) 3.6 for cGPA, unless you have an extremely compelling application (or unlimited application dollars). Possible mitigating factors, like stand-out extracurriculars, non-traditional age with an interesting past career, legacy factor, membership in an underrepresented population group, economic disadvantage, people with PhDs, ex-military, participants in the Peace Corps, etc.
