I'm planning to take intro to music appreciation for my general ed course. Other options are enviro, dairy sci, intro to arch, random philosophy courses, etc.

Main reason I'm choosing this class is that it is an easy A (most of them are), plus its more interesting than other classes like intro to environmental.

Will schools look down on this even though I'm taking 3x upper level science courses like biochem +lab, drug chem, and analytical lab?

I know the general rule is "A>B" but what about a tough sounding A vs. 100% guaranteed A?

Your undergrad career is more than an application to medical school. It is a time to explore, develop interests and meet students and professors who have different interests than yours.
I agree. Take classes that fulfill degree requirements AND you enjoy. Once you're in medical school, you will never get that time back again.
