How do things work with acceptances and waitlists?

I am currently in medical school, however my girlfriend is applying to veterinary school. From my understanding, the process is a little different. Specifically, I am a little confused about acceptances and being waitlisted.

For medical schools, if you recieved multiple acceptances you could hold onto all of them until a specific date (May 15th or something like that), at which point you could only hold onto one acceptance, and you had to turn down your others. In this case, you could still remain on waitlists at other schools, as long as you only held onto one acceptance. You could then turn down this acceptance later and forfeit your deposit if you received an acceptance at a different school that you wanted to go to.

Does it work the same way with veterinary school? I heard somewhere that if you accept at one school, you have to resign from your waitlists at other schools. This can't possibly be true can it? What if get into an OOS school, but am holding out and hope to get into my state school?

I would appreciate if you guys could clarify this for me
 
Your understanding of the process is correct. You do NOT have to decline your waitlists spots.

For instance, I have been accepted by UC Davis but waitlisted at WSU. Technically, if I hear from WSU, I could decline my seat at UCD and attend WSU.
