How does this whole AMCAS process work?

I won't be applying till June 2005, but I just wanted to know how the AMCAS process works. I'm sure you need to submit an essay and all that good stuff, but do you have to write one on a specific topic? Do you write just 1 essay or several? Also, how much room is there for extracurricular activities and such? Thanks for your help, and good luck!
