How does updating application work?

Hi, I was wondering if schools get notified that I updated my application or how it works?

I plan on doing a bunch of volunteering over winter break including a mission trip. I wanted to add the volunteering to my application now since schools will be checking the academic updates; however, I cannot put future dates. Should I just wait until I complete the volunteering then add it, or add it now and note in the description that this is a future event?
