How late is too late?

Much as I am loath to admit it, I haven't submitted my AMCAS yet. I am taking the MCAT 8 July, and because med schools won't look at the application before the MCAT score is added to it, I didn't exactly rush. I was waiting to get my activities for this summer finalized so I could add them to the application and, unfortunately, they are taking longer to work out than expected.

To make a long story short, I am shadowing a local family doctor this summer whose practice is affiliated with the (only) local hospital, where I was planning to volunteer. The volunteer coordinator sent me the paperwork in May and, after taking forever to respond to my emails, has told me that, because they only need a limited number of volunteers and other students want to volunteer and I'm also shadowing, I can't really do both. I'm trying to sort this out. So, the end result is, other than the shadowing, I don't know what I'm doing this summer (clinical volunteering? volunteering at some community thing as yet to be determined?) but I would like to be able to add something to my application. So how long can I sit on my application before I really have to send it in sans my volunteer activity for this summer?
 
Submit your primary ASAP, because it takes about a month at least for them to verify your transcripts.
