AACOMAS has informed me that my transcripts have been received and processed. Now I'm waiting for them to be verified.

How long does that usually take?

Check out the stickies section about AACOMAS. Some people were verified within days, and some within a week. The earlier you apply the sooner you can get verified, however it can take up to 4 weeks, I believe.

Sadly, I did not use any grade forgiveness so I don't know how that work. But yes, you will be able to see your GPA calculated by AACOMAS

Nope a previous scored mcat has to be on file, even if its expired.
