Some of them I definitely would talk about when I get interviewed without disclosing who the patient was obviously and some of patients I am exposed to have such shocking circumstances it's hard not to talk about them.

Any kind of information that would allow you to identify someone that has received medical care would be a violation of HIPAA. Things like their name, address, medical record number, etc.. It's fine to talk about things you see in your medical experiences, but don't share specific infor.mation about the patient's involved. Be vague. For someone being treated for a rare disease or something that's otherwise exceptional, then simply sharing the circumstances surrounding their treatment may violate HIPAA (when it otherwise wouldn't).

If you're thinking about sharing some info about a patient encounter, ask yourself this question: could something I say here be used to identify this person? If the answer is anything close to "yes," then either change the information or omit it entirely.
