How to Apply during gap year(s), esp. peace corps

Hello! I am a freshman in college trying to plan out my pre-medical course work. I plan to spend a semester abroad my junior year, and finish my pre meds at the end of senior year, take the MCAT the summer after I graduate, and hopefully be accepted to the peace corps. So I'm planning on taking two gap years both to have time to do well on the MCAT as well as experience a service project like the Peace Corps.

My question is, how would I go about applying while in the Peace Corps? Would I have to take time off for interviews? Does anyone know how this works?

I know its very far off, but if it isn't possible than I want to be able to adjust my plans now.
 
Here are a few things to think about...
1. What kind of email/internet access will you have? You will receive secondaries/interview invites over email. Will you be able to work on and submit applications there? Will you be able to have someone read/edit them?

2. Will you be able to travel for interviews? Consider both your ability to travel in the program and your financial ability to purchase what could could potentially be multiple international flights
 
I have a pre-med friend finishing up her last year in the Peace Corps now, she just took the MCAT, and she'll be applying this coming cycle.

I really don't think you'll be able to have that much time off to travel back and forth for interviews, but that's a better question for someone involved in the Peace Corps.
