humanities only or can it be non-sci letter

I've heard 2 different things, so for letters of rec, do most schools require a humanities letter (like in english) or can it just be a non-science letter (like social studies) Can it be a letter from a prof in health care issues or public policy or does it have to be a class completely unrelated to medicine and science??

I really dont want to take a humanities class just for the sake of getting a letter of rec.
 
Schools will usually say "non-science", which explicitly means "non-science" - S.S., humanities, anything but science.
 
Jefferson has the absolute most demanding letter of rec requirements. Most schools aren't near that bad. I am not applying to them specifically because of their letter of rec requirements. They're freakish. No one should know that many profs that well.
 
Wow - just out of curiosity, what are Jefferson's rec requirements?
