Adcoms generally look for 1 non-science and 2 science. I have 3 non science potentials and atm, only 1 science potential (and somewhat weak at that).

What options do i have?

Think back to your classes, were there any other science potentials where you did well and the teacher knew your name? If not, then take another science class (if still in school) and focus on getting a good rep for that LoR.

Does it help if math is considered "science?" Do you have science-based research? Are you a nontrad and employed in the real world? Can you take a science course now to get aLOR?

I'm out of school so I can't take a science course at my original institution
 
Some schools will specify they want science faculty who taught you (in a classroom). For all others, and for desperate nontrads, I'd say it will do, presuming the PI has science credentials.
I was able to use a PI letter as my science letter at all schools. That being said, I also had a committee letter (which sometimes 'trumps' all letter-specific requirements at certain schools) and had taken an independent study course that was mentored by my PI (though she was not the instructor of record for the class).
