I sent in my AADSAS in September, and since then I have been working as a dental office assistant at a local clinic. Becuase I started working after I submitted my application, I did not list this experience in the Additional Information Section of the application. I want to let the schools know I am working in a dental office ( cuz I did not have too much pre-dental experience before). How should I inform the schools? By writing a letter ? or telling them in interviews?

I would tell them at your interview and make it known.....also brush up on the spelling, advise?? (Try advice next time)
