I took a graduate course this semester on Maternal and Infant Nutrition and I absolutely loved it. I am interested in getting certified to be a lactation consultant, but it is time-consuming. Would it be beneficial to get this certification and work with it when applying to medical schools? Would it be viewed as a valuable experience?

Only if you actually use it. Merely getting the certification won't impress me or my Adcom colleagues.

If I got the certification I would certainly use it

If you’re pressed for time, look into the CLC. PM me if you want more info.
